- 6 anchovy fillets (optional)
- 2 tbsp capers
- 2 garlic cloves
- 1 tsp fresh thyme leaves
- 1 tbsp Dijon mustard
- Juice of half a lemon
- Freshly ground black pepper
- 60 ml olive oil

Instructions
- Put all the ingredients into a food processor, fitted with the metal blade. Process for 15-30 seconds until smooth.
- With the machine running, slowly pour in the olive oil to make a firm paste.
- Store in an airtight container.
