The classic mayonnaise – chicken sandwich is made lighter with this week.
This is a time saver recipe for the Lunchbox Sandwich day. Yes, we all have a sandwich day in the load – busy week for our Lunch on the go. Despite everything it is the loveliest recipe for kids lunchboxes.
Why this recipe is a time saver:
1) Once you make the dinner Roasted chicken breast with crispy crust, just cook one more breast and follow the recipe for the filling. Reserve the filling for Lunchbox. Just wrap in a bread and you are ready.
2) If you have a left-over roasted chicken – go with it.
To make sure the bread doesn’t get soggy, you can pack the chicken salad in a lid -container then combine when you’re ready to eat.
This is our favorite and easiest ways to whip up a light, healthy lunch when we are in a rush.
All you need is some leftover rotisserie chicken or cooked in the steamer chicken breast from the night before, Greek yogurt, some grapes or apples, and you’re golden.

We use halve yogurt and halve mayo for the sauce. We promise you will not miss the taste. You will be surprised how light and fresh the sandwich will become.
