Baked Pork Loin with butter sauce

Instructions

1. Wash and pat dry the meat with kitchen papers. Using a sharp knife make diagonal slot, at 1.5 cm distance and 0.5 см into the meat.
2. Rub pork with about 1 tsp oil. Mix the spices and spread over the meat - all over. Do not brown pork on stove.
3. Prepare the sauce: Melt butter in a saucepan over medium high heat. Add garlic and cook for 1 minute until golden. Add remaining sauce ingredients and stir to combine. Set aside.
4. Preheat oven to 180 °C, no-fan, standard baking.
5. Place pork in a roasting pan. Reserve 1/2 cup of the sauce, then pour rest over the pork.
6. Add 1 cup water around the pork. Roast for 1 hour or until meat thermometer in the center reaches 65°C. Pour over with the sauce in pan every 20 minutes. Ensure pan does not dry out - add more water if needed. Remove pork onto serving platter, baste with all remaining pan juices. Cover with foil for 15 minutes.
7. Pour the juices from the pan into a casserole and add 1/2 cup water. Mix the corn-flour with 3 tbsp water and add to the saucepan.
8. Cook sauce over medium high heat, for 5 minutes, stir constantly until you get a syrupy consistency. If sauce is too thick, just add more water.
9. Slice pork into 1.5-2 cm thick slices and serve with the sauce.
