Oven baked Vegetable croquettes – you will certainly include them often in kid’s lunchbox when they go back to school for several reasons:
- Kids love croquettes.
- They are loaded with vegetables that most kids like – potatoes, peas, zucchini, corn.
- They have an attractive look and are great finger food, which makes it easier for the ever-hectic student to eat and enjoy.
- No frying, which keeps croquettes fresh for days. You can store them in the refrigerator all week.
- You can prepare the mixture on Sundays and only bake them during the week.
- For the crispy crust, you can use different combinations that will bring variety: 1) breadcrumbs + parmesan; 2) breadcrumbs + corn cornflakes; 3) seed mix – sesame + flaxseed 4) finely ground nuts
- Croquettes are very tasty and cold.

Croquettes can be put as a standalone dish in the Lunchbox or as part of a burger. Add yogurt sauce, mayonnaise or pesto. You have many variations to try and have something to surprise your kids whole year.

Tips for perfection:
- Use a courgette with a dark green crust. It contains less water than others.
- Boil the potatoes with the skin on and then peel. That way they’will absorb less water.
- If you let the mixture cool in the fridge, it will be easier for you to shape the croquettes.
- Don’t mash the vegetables to puree Keep their texture. Unless you have a very picky child and your goal is to mask the content.
