Gnocchi with Blueberries and Gorgonzola is a Lunchbox favourite meal. For reasons to love them:
- They are light and fluffy.
- Delicious and with intense flavor.
- Easy to make – only 30 minutes to make them from start to finish.
- You can eat them warm and cold.

When shaping the dough, it should gently stick to your fingers. If you put too much flour, you will form the gnocchi more easily, but they will be more like boiled dough rather than airy potato balls that melt in the mouth.

Tip: When doing gnocchi, freeze a portion in an envelope. This way, you can always make a fast food in less than 10 minutes for the lunch or dinner box, and you won’t order food over the phone because you don’t have anything on hand at home.
Variations: Replace blueberries with pears. If you do not have time and are looking for a similar taste, make pears with blue cheese.
If your kids do not like Gorgonzola cheese taste, use Brie or other soft cheese.
This delicious plate is perfect for summer hot days with a glass of cold white wine. Enjoy the summer.
