Bread baskets with zucchini are for those special moments when you need to do something in a hurry for Lunchbox and only with simple products you have in your fridge.
The recipe is a great way to use old bread at the end of the week and turn it into a sumptuous recipe for Lunchbox.

You will easily make the baskets with the help of a kitchen blender. Chop the bread, mix with a clove of garlic, egg, olive oil, salt and pepper. Run the blender until you get fine crumbs.
Use a muffin mold and form baskets. From the offered amount you will make 9 baskets. (190 calories in each) Make sure the crust is thin and even on the walls of each muffin nest.
You can also use a shape for rectangular cupcakes measuring 8x6x4. You will receive 4 or 5 baskets. We like rectangular cupcakes because they are perfect for the Lunchbox containers.
To get a crispy crust, first bake the shaped baskets with the bread crumbs for 15 minutes in a preheated to 190°C oven. Then prepare the filling, distribute in the molds and bake for 35-40 minutes in the oven.
