Ingredients
- 200 g baby spinach
- 3 big figs, quartered
- 100 g Halloumi cheese, sliced and grilled
- 50 g toasted pine nuts
- 5 tbsp balsamic vinegar
- 2 tbsp fig jam or fresh fig juice
- 5 tbsp extra-virgin olive oil

Instructions
- In a small bowl or jam jar with fitted lid, add the vinegar, fig juice, olive oil and balsamic vinegar. Shake well and pour over spinach leaves. Mix and set into a salad bowl.
- Top with the figs, grilled Halloumi cheese and pine nuts.
