This is our midweek version of Chicken Cordon Bleu for busy mums with all the flavors, crunch and much faster to make than the original recipe. And healthier too because it’s baked, not fried, with less calories and far easier.

The French classic Cordon Bleu – a breaded chicken rolled up with cheese and ham inside. It is so extremely delicious but it’s hard and time consuming to make. Flatten chicken, roll it up with cheese and ham inside, dredge in egg, crumb it, fry it in oil then finish it off in the oven, make the sauce. Wow….we got tired even just writing that out!
