These Brussels are vegan, gluten-free, low-carb and great to eat in winter.
Roasted Brussels Sprouts with Garlic is a super easy and delicious side dish recipe. The brussels turn dark and crispy on the outside and creamy inside. The roasted garlic and lemon turn the little balls into a magic – crispy on the outside and soft inside. Pure deliciousness.
Brussels need some preparation before cooking – you need to go through them one by one, cut off their tough ends, and trim off their outer leaves. The good thing is they cook themselves. Once cooked squeeze the soft garlic cloves out of their papery skins and squeeze the lemon over the brussels and serve!
Roasted brussels sprouts with garlic are the PERFECT side dish that is also loved by the Lunchbox as they can be made ahead of time.
Tips:
Our favorite way to serve these Brussels is with chicken and a big salad for busy weeks: easy to make, healthy, and delicious. You could easily sub a piece of salmon or even some tofu. Simply season some chicken breasts with salt, pepper, then put them on the tray with the Brussels after 15 minutes. If you have always hungry teenagers, throw some potatoes (cut in 3 cm pieces) on the tray with the Brussels when they go into the oven. They’ll cook in the same amount of time. Easy!
