The classic chicken salad is usually prepared with bought mayonnaise and certainly is not a dish that we define as “good for your heart.” In this version of the Curry Chicken Salad, we replaced the mayonnaise with a combination of useful and good fats from avocado and olive oil, which are great sources of omega-3, taking care to reduce inflammation in the body. Avocados are a great source of potassium (even more than bananas). Contains water, fiber and protein and more than 20 other essential nutrients such as folic acid, vitamin C and vitamin K.
The curry chicken salad can be served on your favorite cereal on lettuce wrapped in tortillas or as a pure classical distinct salad. This makes it a universal dish in which you will find yourself in the spring.
