Ingredients
- 2 medium eggplant, cut into 1 cm stips
- 1 cup bread crumbs or gluten free if needed
- 1/2 cup grated Parmesan cheese
- 1 tsp oregano
- 3/4 tsp salt
- 1/2 tsp garlic powder
- 2 eggs
- Sunflower oil for drizzling
- Quick Aioli sauce:
- 1/4 cup mayonnaise - home made
- 1 tsp pureed baked peppers
- 1 tsp lemon juice
- Pinch of salt

Instructions
- Set a rack in the top third of the oven. Preheat the oven to the highest temperature. Lightly coat a baking sheet with oil.
- Mix the bread crumbs, parmesan, oregano and garlic salt in a medium sized bowl. In another bowl whisk the two eggs with a small splash of water.
- Put the eggplant strips first in the egg then in the bread crumb mixture. Place the eggplants on the baking sheet and drizzle with little oil.
- Place the egg plant in the oven and bake for 5 minutes. Turn the eggplant fries over and bake for another 4 minutes until crispy and brown. Keep an eye on them.
- Serve with Aioli for dipping.
