Exquisite sea bream with fennel

Instructions

1. In a bowl combine the soft butter, grated lemon zest, lime juice, salt, black pepper, finely chopped pepper, and grated fennel.
2. Wash and dry the fish thoroughly. Make slits, transversely along the length of the fish. Fill the slits with aromatic butter.
3. Open the fish and put the lime zest inside, sprinkle salt and pepper and put in 1 tbsp chopped fennel.
4. Place a sheet of aluminum foil on a tray. Grease it with butter. Place the fish on top and fold the foil so that it meets the opposite end. Attach the two leaves as if you were forming calzone.
5. Place the tray in a preheated oven to 180°C for 20 minutes.
6. Open the aluminum foil and return the fish to the oven for another 10 minutes to crispy crust.
7. Transfer the fish to a service dish. Transfer the juices that have remained in the foil and pour into the slits of the fish.
8. Mix the products for the sauce and serve.
