The long, graceful leaves of fennel contain many important nutrients such as pantothenic acid, pyridoxine (vitamin B6), niacin, riboflavin, thiamine. Phytonutrients in the seeds of fennel include rutin, flavonoids and kaempferol all antioxidants that resist infection, aging and degenerative diseases of the nervous system. The most important nutrient in this vegetable is anethole – one of the most powerful tools against the onset of cancer.
We like adding this vegetable on our winter menus as much often as we can.
This this orange fennel salad will satisfy your taste!
Enjoy!
