Light cheese puff pastry with herbs

Instructions

1. Preheat the oven to 200 C. Lightly grease a baking sheet. Stir together the flour, salt, cayenne pepper and nutmeg.
2. In a medium pan bring the water and butter to the boil. Remove from the heat and add the dry ingredients at once. Beat with a wooden spoon for one minute until the mixture is well blended and starts to pull away from the sides of the pan.
3. Place the pan over a low heat and cook for 2 minutes beating continuously then remove the pan from heat.
4. Beat the eggs together in a small bowl and then very gradually (one tablespoon at a time) beat into the mixture using an electric mixer. Beat all the eggs until the dough is smooth and shiny. It should pull away and fall slowly when dropped from a spoon. Add the cubed cheese and cut spring onion leaves. Stir to mix.
5. Using 2 tablespoons, drop 3 balls adjusting mounds of dough on the baking sheet. Repeat with the rest of dough. Brush with egg yolk and sprinkle sesame seeds if you like. Put the tray in the oven, reduce the heat to 180 C and bake for 40 minutes.
6. Cool slightly on a wire rack and serve warm.
