The soda bread is a quick and easy recipe for baking bread at home when you do not have enough time for dough proving.
Leftovers: Soda bread is best eaten on the day you bake it. Leftovers will make a fantastic toast the following day or even day after that!
Freeze: Soda bread can also be frozen for up to 3 months. Freeze the entire loaf or slices and defrost on the kitchen counter as needed. Warm up in in the oven or simply toast it.
Flour: Using half plain and half wholemeal flour gives great result. We love it with wholemeal spelt flour which you can get in supermarkets. Of course you can make it with standard plain flour only – you will get a lovely and delicious soda bread.

For best result:
1) Make sure your oven is preheated when putting your bread in.
2) As flours do differ you might need to add some extra milk to your dough if your dough is too dry or perhaps a bit more flour if it appears too wet and sticky.
3) Don’t handle your dough too much – minimal kneading, just so that it holds its shape.
4) Once you form your b bread, put it quickly in the oven – as baking soda has already started its job.
5) Make sure to cut the cross in the middle of the loaf to ensure that your bread is evenly baked.
6) For a crusty soda bread – cool it on the rack uncovered. If you prefer soft crust – wrap it in a clean towel when still warm and the moisture will soften your crust.
