Large colorful peppers are amazingly versatile and can be stuffed with just about anything. You can use meat or go vegetarian, experiment with seasonings, cheeses, grains! They’re simple, satisfying and practical.
This time we fill them with the flavors of spring to make them fresh, light and balanced. To make them convenient and appealing for kid’s lunchbox we made the filling with minced turkey breasts minced with cooked peas and fresh mint to welcome the spring.

How to do it:
- Make the minced meat by adding flavors, shape walnut size balls and bake in the oven.
- Then halve the bell peppers and cook them in a baking dish until just tender for 20 minutes.
- While they cook, stem the spinach for 5 minutes or sauté with garlic.
- When you’re ready just layer the spinach in the peppers boats and fill with the baked turkey balls.

Note: The amount of meat is more than you need for the recipe. Reserve the rest for another delicious lunch. Cook with zucchini, pepper and tomatoes for a quick and light dinner and lunch in your Lunchbox.
