The dough: use white flour or a mixture white and wholegrain. Here we have used 400 g white flour and 100 g ciabatta flour. But you can also try spelt flour or other wholegrain flour of choice. This quantity will produce 12 baguettes. You can bake in the baguettes trays as we have done here, but feel free to make rolls. Space out your rolls on a prepared baking tray, cover and leave to prove, then continue to follow the rest of the recipe.
