Tutmanic is a typical and favorite Bulgarian breakfast. What makes us to love it so much:
1) The airiness of the dough. It is so light and elastic that when you break it, it regains its shape.
2) The layers – the dough is rolled and saturated with butter. It’s like tearing silk into a thread that melts in your mouth.
3) The feta cheese – the distinct and unique taste of cow’s cheese gives an irresistible combination in which you fall in love forever.









How we achieve air Tutmanik dough:
To get this fairy and airy texture, the dough must rise 3 times. This is the only reason not to make this unique Bulgarian dish too often. It takes time.
Divide the dough into parts, roll each into a thin crust. Line the first crusts on top distributing part of the cheese and butter mixture. Then set over the second one, repeat – cheese and butter and finish with the 3rd crust- butter and cheese. When baking, the butter makes fine lovely holes. Delicious!
You can prepare a large Tutmanic if you double the products.
This recipe is Ideal for breakfast, afternoon snack or as a rich cheesy bread for a festive table.

Tutmanik Variations:
Add spices of your choice for a variety – thyme /rosemary/savory.
Add to the melted butter 1-2 tbsp pesto sauce with basil.
To the cheese mixture, add dried tomatoes or olives.
Products:
Flour, yeast, eggs, cheese, yogurt, butter and oil. Nothing special and nothing complicated. All you need is a little time, patience and desire.
