Warm salad with zucchini and pumpkin – an easy but spectacular appetizer or side dish for meat and festive gatherings.

The only complicated thing here is to cut the zucchini and pumpkin into strips about 2 mm thick and roll a spiral into a series of rings – pumpkin, followed by zucchini, again pumpkin – zucchini until you fill the refractory bowl.

Then put in the oven for 20 -30 minutes and you’re done. All you have to do is arrange the salad with hummus roasted peppers, boiled quinoa and pomegranate seeds.

A great way to make a festive Christmas or New Year’s table charming in just 30 minutes.

Pepper humus

To make hummus with roasted peppers you need:

  • 400 g can of chickpeas
  • 8-10 pcs. roasted peppers
  • 1 tbsp vinegar
  • 5 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Blend and you are ready!
