Roasted beet, spinach and quick quiche is a great dish to prepare ahead. You can assemble everything several days in advance. Place in a cooking sheet, cover and store in the fridge.
We use 4 sheets fine pastry to get a lighter version of quiche and save time from preparing the dough.
