Zucchini cut in ribbon shape ribbons look like tagliatelle and colored pasta and transform the boring green salad into a fabulous summertime salad.
The roast garlic makes the dish. To roast garlic, put a whole head of garlic on a highly oiled baking sheet. Sprinkle over some herbs of choice like freshly ground black pepper and rosemary. Place in a preheated to 180 °C oven and roast for 30 minutes. Remove the garlic from the oven and set aside. When cool enough to handle dig out the flesh from the cloves with the sharp part of a knife.
If you do not have time for roasting the garlic, use a crushed raw garlic, but you will get a strong flavor result.
Serve the salad with pasta or meat.
