Ingredients
- 2 large zucchinis, cut in cubes
- 1 leek, cut in chunks
- 1 large potato, peeled and cut into cubes
- 60 g hard Cheddar cheese, grated (1/2 cup)
- 2 tsp butter
- 2/3 cup milk
- 1 tbsp sunflower oil
- 1 tsp salt

Instructions
- Place the zucchini, leek and potato in a large pan and just cover with water. Do not add too much water - 2 cups should be OK. Bring to a simmer over medium heat and cook for 25 minutes, until the potatoes cubes are tender.
- Remove from the heat and while the mixture is still hot, add the cheese, butter, milk and a large tablespoon of sunflower oil.
- Blend to a creamy consistency and season with salt to taste before serving.
- Serve with salad and goat cheese puff pastry.
