Pretty Provence Tomatoes with oregano

Instructions

1. Halve the tomatoes. Using a small pointed teaspoon, scoop out some of the seeds and pulp, and discard. Place upside down on a kitchen towel and let drain for at least 15 minutes.
2. Preheat the oven to 190 °C.
3. In a bowl mix the breadcrumbs, oi, garlic and herbs. Season lightly and add the sugar.
4. Using a teaspoon spread the mixture into the tomatoes, patting it evenly.
5. Place tomatoes in a gratin dish, large enough to accommodate them side by side, and still leave a little space between them.
6. Bake for 30 minutes or until tomatoes are tender but still hold their shape and the filling is golden. Snip over the basil leaves and serve warm or at room temperature.
