It is a super quick dinner or Sunday Lunch because cooking fish fillets on the stove takes less than 5 minutes!

Key notes for perfection:
- To prevent sticking fish to the pan, use a heavy based skillet.
- Heat the pan before adding oil – It is an easy way to ensure the oil is hot enough but not too hot (a common mistake people make).
- Do not move the fish until it naturally releases from the pan!
- Pat fish dry before cooking.
- Always put the fish -skin on the pan, Skin-down. If necessary, press with a fork to ensure the fish lays fully on the pan. Once cooked, spread over the Parmesan, and turn over to cook the other side.
- We suggest preparing the sauce separately and serve the fish over the cooked sauce to keep the crispness.
Use home-made sun-dried tomatoes for better taste if possible.
