Mariposa pasties with milk cream

Instructions

1. Separate the egg whites from the yolks. Beat the egg whites until fluffy, adding a pinch of salt, 2 packets of vanilla and 1 tsp sugar. Transfer to a bowl and beat the egg yolks with the sugar, add the flour, cornstarch, ground almonds and baking powder. Add the egg whites carefully to the yolks with a spatula.
2. Place baking paper on a 20x25cm baking tray, grease the bottom lightly with oil and sprinkle with sugar. Pour half the mixture into the pan and bake in a preheated oven to 180°C, without a fan for 12-15 minutes until golden brown. Remove from the oven and turn over a large board, remove the paper. Leave to cool. Repeat with the remaining mixture to bake the second crust.
3. Make a "compote" of tangerines. Peel the tangerines and put the pieces in the casserole. Add 2 tbsp sugar and 100ml. water. Leave on the heat until the water evaporates. Pour the tangerine “compote” into a sieve to drain well.
4. Whisk the apricot jam and crush the fruit with a fork to a smooth texture and apply evenly thin layer over the first crust.
5. Mix the sour cream, cream cheese and Mascarpone cheese with 40 g. powdered sugar and mix well. Spread half evenly over the apricot jam. Carefully put the second baked crust on top. Gently press with your palms. Apply the remaining cream evenly on top. Cut into 9 pieces (approximately 6x8 cm).
6. Cut the chocolate into pieces and melt it in a water bath. Remove from the heat and set aside to cool slightly.
7. Carefully "dry" the tangerines with kitchen paper. Place 2 tangerines with the round sides to each other (like a butterfly shape) on each piece.
