It is easy to bake a Juicy Turkey and you will always get a get a great result if you follow several tricks.
1) Buy Turkey 3 days ahead before cooking as it needs time to thaw. At least 24 hours in the fridge.
2) After washing carefully, the turkey you will season it for 2-3 days before roasting. This step is called brining and will:
– Produce a moist flesh.
– And crispy skin
So you need 4 days ahead to cook the Turkey.
Some tips:
1) Always start turkey roast upside down for a juicy breast
2) Roasting time: 15 min per 500g. It is ready when meat thermometer inserted between leg and thigh reaches 80°C.
3) 30 minutes resting essential!
4) Do not skip the Gravy sauce.
Brining the Turkey?
Turkey needs brining. You can make wet or dry brining. Dry brining is easier and tastier!
Wet Brining – the is soaked in a salty water mixed with herbs. This has the effect of trapping moisture in the flesh while it roasts,
Dry brining has the same effect, but is done by rubbing the turkey with a seasoned salt then left to “marinate” for 2-3 days before roasting.
To Stuff or Not to Stuff?
Stuffing needs more cooking time for cooking. To be sure that stuffing is cooked the turkey will be overcooked. Best option is to cook stuffing separately.
And use the pan juices to make the Gravy sauce.
