Friday night is traditionally pizza day. We often prepare this sumptuous option for two, with wholegrain dough. Trick: always keep at least 200 pizza dough in the freezer. It will always work for you on a lazy Friday night, at the end of the working week.
For very hungry people, double the quantities. But in our opinion, an average pizza and a rich salad are more than enough food.
If you don’t have any powers, make an express version like this:

Healthy Pitta Pizza for Lunchbox
Lightly poache an egg. Toast a wholemeal pitta bread for 2 minutes on each side. Spread with tablespoon of tomato purée. Heat a tablespoon olive oil in a frying pan and add spinach leaves. Spread over bread and top with poached eggs. Sprinkle with pine nuts and mozzarella. Cook over hot grill for 3-4 minutes.
