Gingerbread biscuits mixed spice  : 

1/4 tsp cinnamon + 1/8 tsp nutmeg + 1/8 tsp cloves + 1/8 tsp ginger +1/8  coriander


The Gingerbread cookies dough is sticky. One way to work with it easier is to make sure that the dough is cold. Once it gets sticky, put it in the fridge. The continue with rolling and cutting. Remember – sticky dough means moist cookies.

TIPS:

Rolling tips – Gingerbread dough is soft and sticky. This makes the gingerbread cookies moist not dry. Refrigeration makes the dough easier to work with. Once roll/cutting process gets tough, stop, and refrigerate to make it easier to work with. Rolling out between baking/parchment paper is a well-known technique that works great here and helps a lot. Do not use too much flour otherwise you will have hard cookies, nor moist.

Molasses – Do not replace it. If there is no way, use honey but cookie will spread a touch more, loose the deep golden color and not have the same rich flavour but will be delicious. Maple syrup is too thin and will not work.

Gingerbread cutter – use is 11cm long. It looks really good.

Baking: If you want a softer cookie with golden colour – bake 7 minutes. For a crunchier cookie with more color, bake 9 minutes. The cookies will be soft straight from the oven but will harden upon cooling. Note – crispy cookies go soft the next day.

Storage – These cookies last for 1 week in a tightly-sealed airtight container.
