Ingredients
- 3/4 cup mashed potatoes
- 1 cup sugar
- 1/2 cup sunflower oil
- 2 large eggs, lightly beaten
- 1 teaspoon vanilla
- 1/8 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 cup all-purpose flour
- 2 tbsp cocoa powder

Instructions
- In a large bowl, combine the mashed potatoes, sugars, oil, eggs and vanilla. Combine the flour, cocoa, baking powder and salt; gradually add to potato mixture. Transfer to a greased 20 cm square baking pan.
- Bake at 180°C for 35-40 minutes or until toothpick inserted near the center comes out clean. Cool on a wire rack.
