The best part of bringing lunch from home is when kids find a sweet treat in their lunchbox. As parents we would like making sure they got a good, home cooked meal. The rare and occasional sweets ( 3 times per week) are always something kids hope for. Something they look forward to.
Now we see the same hopeful look in kids’ eyes when they check to see what we are packing in their lunchboxes for the day.
And while we are all usually a pretty strict moms, we hate seeing that look of disappointment on their faces when they doesn’t get something they like.
So we decided to create something that we would feel better about giving them. Something that is mildly sweet without giving them such a large sugar rush that they can’t sit still in class. Something with low carbs. That’s why we used rye flour. So we kept the sugar relatively low as well as the portions by making these Lunchbox Muffins With Honey and Grapes but keeping the great taste.
These muffins are perfect for any lunchbox! They don’t take up much time to be cooked, they are totally kid-sized and give kids just enough sweet to put a smile on their faces.

Tip:
Divide the butter in 2 parts, before adding the grapes. Add dark chocolate chips to the first and grapes to the second part. Continue with recipe instructions.
