Aubergine Melts with Mozzarella

Instructions

1. Place the aubergine halves on a baking sheet. Drizzle with olive oil and bake in a preheated oven to 200 C for 20 minutes until softened.
2. Remove the aubergine from the oven, arrange the slices of tomato and mozzarella on top and bake for further 5-10 minutes, until the cheese has melted.
3. Scatter with basil leaves and nuts, season with red pepper flakes and serve with crisp green salad.
