There is always a little space left at the end of a meal for a dessert, particularly if it is rich and creamy, icy cold and best of all chocolate. Here is our sweet idea with this airy white chocolate mousse.

Ingredients
- 200 g white chocolate
- 80 ml milk
- 200 ml whipping cream
- 1 tsp vanilla essence
- 3 egg whites
- 1/8 tsp salt
- Squeeze of fresh lemon juice
- Coffee beans for decoration

Instructions
- In a heatproof bowl set over a pan with boiling water, melt the chocolate.
- Pour milk in a small saucepan. Remove the bowl of chocolate from the heat and whisk in the warm milk until smooth. Let cool.
- In a mixing bowl, whip the cream with the vanilla until soft peaks form. Refrigerate until needed.
- Using an electric mixer and a clean bowl, beat the egg whites with the salt and lemon juice until stiff peaks form. Do not overbeat or the mousse will be grainy. Fold in the chocolate mixture.
- Gently fold the chocolate and egg mixture into the vanilla flavored whipped cream.
- Transfer to a pretty serving bowl. Cover and refrigerate at least 1 hour. Sprinkle with coffee beans before serving if wished.
