A gougère, in French cuisine, is a baked savory choux pastry made of choux dough mixed with cheese. There are many variants. In fact, Gougers are the savory version of chouquettes. (A chouquette is a type of Choux pastry consisting of a small portion of dough sprinkled with pearl sugar.) They are traditionally sprinkled with strong cheese like Comté, but we like them topped with black sesame seeds, herbs and spices too.

These savory, salty puffs are great for breakfast or snack.
Tip: Make sure you have all your ingredients measured and ready to hand.
Gougères are best eaten straight away, but they can be kept in an airtight container for several days. To crisp up, bake at 150°C for 5 minutes.

Ideas: Instead of the cheese topping you could have a sprinkling of poppy, fennel seeds, caraway or sesame seeds. Why not topping the Gougères with both cheese and seeds?
