Crokmach is a kind of salty dish, which is traditionally prepared in northern Bulgaria. This is one of the ways to store a large amount of sheep’s milk.
To make 1 jar of crokmach you need about 2 hours.
- 1 litеr of sheep’s milk
- 70 g. feta cheese
- 1 tbsp salt
Boil the sheep’s milk in a water bath on a low heat for 90 minutes until thickened.
Transfer it to a clean, sterilized jar and add crumbled cheese and salt. Close the jar and put in a refrigerator. In the next 3 days, shake the jar 3-4 times a day.
After about 1 week it is is ready for consumption and you can store it long in the refrigerator, up to 12 months.
