Chicken soup is a classic in Bulgarian cuisine, bringing with it the feeling of a cozy home and warm care. It is suitable for all seasons. The combination of tender cooked chicken, fresh vegetables and aromatic chanterelle mushrooms makes this soup a real culinary delight. Parsnips add a touch of sweetness and a slightly spicy undertone, while carrots and onions bring color and density.

Variations

Instead of boiled chicken, you can use roast or leftovers from another chicken recipe – the taste will become even more intense.

If you don’t have chanterelle mushrooms, you can use other forest mushrooms, but chanterelles give a delicate texture and specific aroma.

Parsnips can be replaced with celery root or added together with other root vegetables according to the season.

Instead of a classic build-up, you can add a little cream or cream cheese to make the soup even richer.

The broth has medicinal properties on the mucous membrane of the gastrointestinal tract and is preferable, but if you do not have homemade broth, use water, but then add more spices.

This soup is easy and has a deep, memorable flavor. Experiment with ingredients according to the season and your personal taste and enjoy a flavorful soup that delights the whole family.

Serve the soup by sprinkling it with more fresh parsley and a few drops of olive oil and lemon juice for freshness. It is great with toast, homemade bread or whole grain croutons.
