Ingredients
- 170 g chocolate, chopped into small pieces
- 50 butter
- 70 g sugar
- 4 eggs, separated
- 100 g walnuts, chopped
- 2 tbsp sugar
- 1 tbsp cocoa powder plus extra for dusting

Instructions
- Preheat the oven to 170 C. Grease a 23 cm round cake tin and line the bottom with greased paper. Dust the cake tin with cacao powder and shake the excess.
- Combine the chocolate and butter in a heavy based saucepan. Set over moderate high heat. Stir until moderate and smooth. Leave to cool.
- Whisk together the sugar and yolks until pale and thick. Add the chocolate mixture, nuts and flour. Beat in gently.
- In another bowl, well cleaned and grease free, and using clean beaters, whisk the egg whites and 2 tbsp sugar until they hold stiff peaks.
- Lighten the chocolate mixture by gently mixing in about one quarter of the whites. Add the remaining and fold them in gently but thoroughly using rubber spatula.
- Pour the mixture into the prepared tin. Bake for 1 hour and 15 minutes or until the skewer inserted into the center of the cake comes out clean. Cool in the tin for 10 min, then turn out on to a wire rack to cool completely.
- Dust the cake with cocoa powder and serve.
