Classic Mediterranean fish stew

Instructions

1. Cut the fish fillets into serving pieces. Put the fish in a bowl with 2 tbsp of olive oil, the orange rind, garlic, saffron and ouzo. Turn to coat well, cover and chill.
2. Heat the stock to boil.
3. Heat the remaining 1 tbsp olive oil in a wide flameproof casserole over a medium heat. Cook the fennel and onion for 5 minutes until just softens, then add the stock. Bring to the boil. Add the potatoes. Cook for 15 minutes. reduce the heat to medium and add the fish. Cook for 5 minutes and add the prawns. Continue cooking until all fish and selfish are cooked. (10 minutes)
4. Transfer the fish, prawns and potatoes to 8 serving soup plates. Serve with gourmet crackers spread with rouille.
