Fabulous no bake mango cheesecake

A creamy mango mousse cheesecake, topped with a beautiful mango jelly is a recipe you will love. Topped with mango jelly piled high with Mascarpone cream (optional), more mangoes, and berries for a great performance. This mango cheesecake is made to seriously taste of mango as we want the mango taste, not just a yellow cheesecake with a mango fragrance.

The cheesecake is made in a food processor. Biscuit base arranged first (no-making) , then the mangoes filling and pour.

We use powdered gelatin to set the filling. Follow the recipe steps exactly with gelatin preparation – the key part is to sprinkle the gelatin powder over the surface of a bowl of water as you do not need a clump gelatin. And don’t stress even if you end up with clumps. Sometimes this happens.

Key to using gelatin powder is to put water in a bowl with wide surface (not a jug) then sprinkle gelatin across surface. If you dump it, it clumps and you end up with lumps. Heating over boiling water helps dissolve. If you end up with a few small lumps, that’s ok. Squish them against wall in attempt to dissolve them otherwise pick them out.

Food processor must be at least 2.5 L. If yours is not that big, transfer pureed mango into a large bowl, then pour cream cheese, sugar, cream and gelatin in food processor, add to bowl and whisk very well. Don’t forget to set aside mango puree for jelly topping!

The cake is decorated with snow ball cookies and blackberries to make it look pretty.

Homemade snow balls are easily prepared with only 2 products and 3 hours of drying time in the oven.

In a dry bowl, put 3 egg whites at room temperature and 180 g of sugar. Put the bowl over casserole filed with water over medium high heat (water bath cooking) and mix egg whites and sugar with the mixer until the eggs are fluffy (about 2 minutes). When turning the bowl, the whites should not fall. Pour the mixture into a posh make small balls in two trays covered with baking paper. You will get about 50 kisses. Bake for 3 hours at 100 C (fan cooking).

The cheesecake is fabulous as it is without these cookies and fruits.
