Festive Tart With Pine Nuts

Instructions

1. For the dough:
2. Place the butter in a bowl and beat with a fork until creamy. Sift the flour onto a clean work surface and make a well in the center. Add the salt, sugar and the 3 spoons cold water to the well and mix into the flour. Add the egg yolk and butter.
3. Work the ingredients together to make a soft dough. Flatten it gently with the palm of your hand against the work surface, then gather it together and flatten it again. Form it into a ball, line a clean film and wrap the dough. Leave to rest in the refrigerator for 20-30 min.
4. Meanwhile prepare the filling:
5. Put the raisins in a cup. Add water to cover and set aside.
6. Preheat the oven to 200 C. Butter a 23 cm tart form.
7. In a bowl, mix together the sugar and the softened butter. Add the almonds . Beat in the eggs one at a time. Then stir in the raisins.
8. Roll out the dough thinly on a floured surface. Lift onto the tin and press in lightly. Form the edge the way you prefer. Pick the pastry case a few times with a fork. Spoon the filling into the case and smooth down with the back of the spoon. Arrange the jar strawberries over and sprinkle over the pine nuts. Bake for 35-40 min.
9. Leave to cool in the tin before turning out and serving.
