A great way to enjoy a pasta bake, without the pasta!

The tomato sauce is simple with traditional pasta tomato sauce: canned tomatoes, onion, garlic and some herbs. We have made the mushroom mixture with frozen spinach as to save some time, but in spring spinach season, if you have time use fresh spinach. You will need 2 kg spinach to gain 200 g cooked for the recipe. And finally, the sweet potatoes give the recipe the spaghetti structure.
