This quiche variation is lighter. Feel free to make individual tarts for your lunchbox. Roll out the pastry and use to make 12 cup trays. Spoon the filling in the pastry cases and bake as directed, decreasing the baking time with 8-10 min.

Ingredients
- 3 medium size zucchini, grated
- 225 g green beans frozen
- 30 butter
- 1 small onion, finely chopped
- 1 red pepper, finely chopped
- 100 g drained canned sweetcorn, or frozen, thawed
- 2 eggs
- 250 ml milk
- 55 g cheese, grated
- Salt to taste
- Ground pepper to taste
- For the pastry:
- 100 g flour
- 100 g ray flour
- 100 g soften butter
- 3-4 tbsp ciced water

Instructions
- Put all the pastry ingredients into your blender with fitted dough hook. Mix until a bowl is formed. Wrap into a plastic foil and set in the fridge for at least 30 min.
- Grate the zucchini add 1 tsp salt and set into a strainer to excess the water for about 20-30 min. Squeeze between your hands and set aside into a bowl.
- Melt the butter into a frying pan, add the onion, red pepper and zucchini. Cook until softened. About 5-10 min. Stir in the sweetcorn. Cook 2 min. longer.
- In a small bowl beat the eggs with milk. Stir in the cheese, salt and pepper.
- On a lightly floured surface roll out the dough. Use it to line a 25 cm quiche dish. Ease the pastry in be careful not to stretch it. Trim off excess pastry. Reserve for small individual tarts.
- Line the pastry case with grease-proof paper and weigh it down with dried beans. Bake 10 min in a preheated oven 200 C. Remove the paper and beans and bake until the pastry is set and beige in color. (5 min). Let cool.
- In a bowl, mix the eggs with the milk. Add the vegetables. Pour the entire mixture over the dough. Bake 25-30 minutes.
