Crispy Red Pepper Rings

Instructions

1. Preheat the oven to 220 °C. Grease a baking sheet with sunflower oil.
2. Cut the peppers crosswise into 0.8 cm rings. Set aside.
3. In a large bowl combine the ground oats, Parmesan, garlic powder, paprika, oregano, basil, salt and pepper. Beat the eggs in a separate bowl. Add the flour to a third bowl.
4. Coat the pepper rings in the flour, then eggs, then finally in the oat’s mixture. Make sure to coat all the sides.
5. Arrange the pepper rings on the prepared baking sheet.
6. Bake for 15 minutes flipping halfway through until golden brown on both sides.
7. Serve with your favorite dipping sauce.
