Tip: Make in advance

If preparing the soufflé base in advance to serve later, prepare the mixture and set in the fridge.

When you’re ready to bake and serve immediately, start with buttering the ramekins and then divide the mixture among them.
In you bake for 13-15 minutes – you will yield a soufflé with a custardy texture and a molten center. Increasing time time to 20 minutes will give you a fully set soufflé with a springy texture.
