Pretzels

Instructions

1. Put the flour, salt, sugar and baker's yeast in the bowl of the food processor fitted with the metal kneading hook. Mix the ingredients for 10 sec, then pour in the warm water and the sunflower oil through the opening in the lid. Knead the dough for another 2 min.
2. Leave the dough to rest for an hour. Divide the dough into 14 small bowls. (around 50 g each). Roll them out and stretch them into thin long ropes about 30 - 40 cm in length, which taper at each end. Leave them to rest for 20 min.
3. Shape the pretzels in the shape of a ring, then knot and fold back the 2 thin ends to make a figure of the figure 8.
4. Heat up the water with bicarbonate of soda and salt. As soon as the water starts to bubble, plunge the pretzels into it. As soon as the they com back to the surface (very fast), take them out with a skimmer and place them on a baking tray covered with grease-proof paper.
5. Preheat the oven to 180 C. Brush each pretzel liberally with the beaten egg and then sprinkle with the coarse salt and the sesame seeds. Place in the oven for 20 min.
6. Variation: the sesame seeds can be replaced by cumin seeds.
