Pumpkin Treacle / Rachel

Instructions

1. Prepare lime milk: Mix the water well with the slaked lime. Three times at every 10 minutes, stir with a spoon, then set aside the mixture for 3 hours to put down the lime and clear the water.
2. Carefully strain the water through 3 layers of cheesecloth, taking care not to pour from the slaked lime All you need is clear water-lime milk.
3. Pour the strained lime water over the chopped pumpkin pieces and set aside for 4 hours. Wash the pumpkin thoroughly with 3 waters to remove the lime milk and let it drain in a colander.
4. In a saucepan combine the water with the sugar. When the water boils and the sugar melts (10 minutes), add the pumpkin and cook over a moderately high heat for 1-1.5 hours. Remove one piece and check the texture – you should see a crispy crust on the outside and a brittle texture on the inside.
5. Add the citric acid 5 minutes before the pumpkin is ready. Add the vanilla.
6. Transfer the hot Pumpkin Treacle into sterilized jars, close with the caps and turn them with the caps down on the countertop. It is important to put in the jars hot Rachel. Heat the mixture if necessary.
7. When cool, store them in a cool place.
