Radicchio has a pleasing, slightly bitter flavor and is refreshing in salads. In this Italian recipe it is cooked and gently caramelized until richly bitter-sweet.
Add some leftover seamed salmon and you will get a great warm salad.
Variations: Add a couple of drained and chopped anchovies and a tablespoon of raisins to the radicchio before sprinkling with water.
