Once rehydrated blend them with your choice of aromatics and spices. And some water to obtain a pancake batter if necessary:  reach consistency between French crepes and thick breakfast pancakes. Red Lentils Tortilla Wraps are not only easy and quick to make, they are also super flexible.

Recipe Tips

Remember to soak your lentils overnight before you start cooking! You can probably get away with a shorter soaking time, but it is better to  give enough time –  a lengthy soaking makes the lentils easier to digest too. These pancakes are great as part of a main meal, as wraps and as substitute to bread.
