Stuffed turkey breast with capers

Instructions

1. Preheat oven to 250 C.
2. For the stuffing: Melt the butter in a frying pan, fry the onion stirring occasionally, until soft. Transfer the onion and butter into a bowl. Add the sliced hum, breadcrumbs, herbs, chopped walnuts and egg. Season to taste with salt and pepper and mix well.
3. lay the turkey breast flat. Spread 2/3 the stuffing over in the middle. Season the meat with salt and pepper. Spread capers over the filling. Roll up the breast neatly and tie in several places with string. At this point you can wrap in foil and set in the fridge till time for cooking comes.
4. Place the turkey breast on a rack in a roasting tin. Pour in 1 cup of water. Brush with half the butter and bake for 30 min.
5. Take the tin out of oven, pour in the chicken broth. Cover tightly with a baking paper and a second layer of foil. Reduce the heat to 180 C and bake for 2 1/2 hours.
6. Take the tin out of oven and brush the turkey roll with Dijon mustard - a thin layer, spread over the 1/3 left stuffing. Spread over the grated Parmesan. Bake for 30 min until the crust is golden-brown.
