Super quick stuffed courgettes

Instructions

1. Slice the courgettes in half horizontally, and the scoop out the middle of each one, reserving the flesh.
2. Place the courgette halves in a roasting tin and bake in a preheated oven, 200 C, for 10 minutes.
3. Meanwhile, chop the reserved courgette flesh and mix in a bowl with chopped tomatoes, grated mozzarella and basil. Season with salt and pepper.
4. Remove the courgette halves from the oven and spoon the filling into each one.
5. Sprinkle with grated Parmesan and return to the oven. Bake for 15 minutes, until golden.
