A classic vanilla sponge dipped in chocolate then coated with coconut and rolled in coconut flakes. A common variation has a layer of cream or strawberry jam between two Lamington halves.
The recipe requires for at least 6 hours rest time to let it firm and be easier to handle when dipping in the chocolate. If you are in a rush, cool the cake, cut it into pieces then freeze it for 1 hour.
